Chocolate Coffee Banana Nice Cream

Raw “Oreo” Cookie Ice Cream Sandwiches

24 pitted Medjool Dates

3⁄4 cup chia seeds

1⁄2 cup walnuts or almonds

1⁄2 cup unsweetened coconut shreds

1⁄4 cup raw cacao powder

Put all ingredients into food processor and blend until it resembles a cookie dough. Form into a log

on plastic wrap and roll up. Put into fridge until firm.

Once firm you will cut into cookie slices. You could use banana slices or strawberry slices as the

filling, but today we will use a chocolate-coffee flavored banana nice cream as the filling- for ice

cream sandwiches.

Chocolate Coffee Banana Nice Cream

1⁄2 cup of cold coffee

1⁄4 cup of raw cacao powder

6 large bananas cut in pieces and frozen

If you are using a food processor please slice the bananas into smaller pieces. Put the bananas,

coffee and cacao powder (and you could totally omit the coffee and/or the cacao powder into

blender or food processor and process until smooth like soft serve ice cream. Put into a freezer

container and freeze for about 1 hour. Using a small scoop, put a scoop of the nice cream onto one

cookie and top with another. You can eat right away but it is a bit soft- I suggest returning to the

freezer and waiting for them to firm up.

You can also scoop into an ice cream dish and put the cookies onto the side as I did in the picture.
